Cook lobster in simmering water for 5min. Reserve this water for the broth later.
Remove lobster and place in ice bath to stop the cooking. Remove meat and chill in fridge until needed.



Add butter in a pot and roast the shells for a few minutes then transfer back to cook in boiling water from first step.


Add more butter then cook onion, carrot, and celery for a couple minutes.
Add in garlic and tomato paste and cook for a few minutes.
Add in flour and cook for a minute.



Add in white wine and stir to burn off the alcohol and dissolve the flour.
Add in lobster water along with the shells. Stir and cook for at least an hour.
Remove shell and blend the remaining mixture.
Add in lobster a few minutes before serving to warm and not overcook.
