Notes

Sushi vinegar is essentially vinegar, sugar, and salt. Every sushi house has their own percentage and different brands they use. I’ve adjusted the amounts more than I can count, but the values here are good enough for me. With that said, the brand, salt, and sugar you use will swing the percentages a lot. You’ll likely need to adjust to your taste if you’re buying something different. I have a personal bias towards red sushi vinegar (akazu). I prefer the deep rich flavor and the side bonus of producing a beauty hue of rice color. When I started making sushi rice, I went with the brown rice vinegar. It was the most accessible in supermarkets and closest to red vinegar I can find. I couldn’t find red vinegar anywhere in supermarkets, so I resorted to searching online. It’s a bit expensive, b
