Directions

Bring sake and kombu to a boil and cook out alcohol.

Combine everything.

Notes

Zuke is incredibly versatile. You can use it to marinate fish, meat, even sous vide egg yolks. Sometimes I use the strong zuke to marinate sushi when there’s not a lot of time in the kitchen. I usually prefer and use the mild zuke for longer marinades, it’s a cleaner and more subtle flavor. The above 2 are my basic guidelines. Sometimes I adjust the amounts or even add water to dilute depending on what I’m working with. If you’re wondering what’s up with the picture… I don’t know how to make zuke look good 🤷🏻‍♂️
