100gbread flour
25gbutter, lard, or extra virgin olive oil (25%)
55ghot water (55%)
2gsalt (2%)
—NOTE: Each dough’s 30g, makes 6.

Directions

Mix everything.

Rest 1hr covered.

Roll out thin and grill over hot cast iron pan.

Notes

This is a healthy version of flatbread. Substitute olive oil with butter if you’re in for something heavy. Quite shocking, I actually prefer oil rather than butter. If you notice, this is a very high hydration dough at 100%. The wet dough will help retain a lot of moisture even when you add flour as you roll them out.
