Salted Egg Yolks

Ingredients

Scale recipe
8egg yolks
345gsalt (1.5:1 salt to sugar)
230gsugar (1.5:1 salt to sugar)

Directions

Mix salt and sugar.

Bury egg yolks in the salt mixture, cover with plastic wrap, then cure for 1-4 weeks.

Brush and rinse off salt mixture in cold water then pat dry.

Dry in 150ºF oven roughly 2hr or until dried.

Notes

These yolks can be preserved up to a month in airtight containers. You can use them pretty much on everything.
