Taiwanese Kimchi 台式泡菜

Ingredients

Scale recipe
1cabbage
2young carrot
2cucumber
1(small) daikon
—1-2 Thai pepper
3garlic
—Salt (enough to get some into each cabbage leaf)
75gsugar (28% of vinegar)
300gapple/rice vinegar
30gspicy sesame oil 辣油
—Note: this makes 2 gallon bags.

Directions

Sprinkle and work salt into the cabbage. Leave for about 1hr to draw out moisture.

Wash off salt from the cabbage in cold water. Pat dry as much as possible.

Combine rest of the ingredients and store in refrigerator.

Notes

Aside from the cabbage, you’re free to choose any vegetables to marinate with. This recipe is pretty spicy, which is how I like it.
