Combine all the ingredients and ferment 5-6 days 78°F, swirl/mix the mixture everyday.

Notes

Did a variety of these in different percentages and tweaks over the years. I’m really liking shio koji 2, which is the composition stated in the ingredients section. Pine koji is a version mixed with pine nuts. The oils have been released, rendering a nice silky texture and nutty flavor. Feel free to experiment with your own variety.
