
Prep a pot of simmering water and a separate ice bath.
Poach herb in hot water for 20 seconds or until softened (varies with the herb). Separate stem and leaf, they’ll have different cooking times. Immediately transfer to ice bath.
Take the herb out and pat dry. Leave it out in the room for an hour or so after patting dry.
Mix herb with oil in a blender. I like a ratio of around 2:1 or 5:2 oil to herb.
