Vanilla Cake

Ingredients

56g(1/2 stick) butter
140gcaster sugar
2eggs
8gvanilla extract
120gAP flour
8gbaking powder
120gmilk
—TT salt

Directions

Whisk butter and caster sugar together until fluffy. Add a bit of heat to semi-melt the butter if needed.

Add in eggs and continue whisking until airy.

Slowly incorporate flour, baking powder, milk, and vanilla extract.

Place in a pan (mine’s 9’’x4’’x4’’), layer with parchment paper, and bake 375ºF for 30min (1hr for doubled amount).

Chill cake in the fridge overnight.

Notes

This is my go-to basic cake. If you find your cake to be too dense, make sure you give the beginning stages a good whip. Don’t bake at low temperature for long durations. The cake tends to collapse which also causes denser cakes.
