Roasted Chicken

Ingredients

Scale recipe
2lbcornish hen or chicken
—Onion
—Carrot
—Celery
—Extra virgin olive oil or butter

Directions

Optional: Dry brine or wet brine the day prior. If wet brined, leave uncovered in the fridge for at least 8hr after brining.

Chop the vegetables and spread them over the roasting pan.

Season everything including the chicken and give it a splash of olive oil or butter.

Truss the chicken and put it on top of the vegetables.

Convection roast 400°F for 25-30min/lb.

Rest 30min.

Notes

I prefer small birds. You gain a lot more control and the cook is much more consistent. It takes less time to cook, which prevents the breast from going dry too quick. Simply delicious.
