Optional: Dry brine or wet brine the day prior. If wet brined, leave uncovered in the fridge for at least 8hr after brining.
Chop the vegetables and spread them over the roasting pan.
Season everything including the chicken and give it a splash of olive oil or butter.
Truss the chicken and put it on top of the vegetables.
Convection roast 400°F for 25-30min/lb.
Rest 30min.
