6lb(2 racks, ~3lb per rack) spare ribs
Spray
—2:1 water to apple cider vinegar
Dry rub
5tspsalt
3tspblack pepper
1.5tspgarlic powder
1.5tsponion powder
1.5tspchili powder
1.5tspmustard powder
3tsppaprika
BBQ sauce or store-bought
250gketchup
150gapple cider vinegar
125gbrown sugar
12ghoney
1.5tsppaprika
0.5tspblack pepper
0.25tspcayenne pepper
0.25tspchili powder

Directions

Remove membrane off the rack by peeling with a paper towel.

Season the racks with dry rub mix.

Roast 250ºF indirectly over charcoal & wood 3hr until colored.

Spray meat vinegar solution and coat with bbq sauce, roast 250ºF for 15min. At this point, you can cook in an indoor oven.

Wrap meat up with parchment/butcher paper, place meat side down, add more BBQ sauce, roast 250ºF for another 2hr. By the end of it, the rack should feel pliable.

Rest meat at least 30min.

Notes

The dry rub could be as simple as just salt and pepper. Make your own bbq sauce or use your favorite store bought brand. There’s a lot of variables to tweak for your personal taste here. The initial smoking stage, you can smoke for however long you want. 2-3 hours is a good rule of thumb, longer the more intense the smoke flavor. You can get away with just water for the vinegar spray. BBQ tends to be thick, the spray helps the sauce stick on better and also rehydrate the meat a bit. The last roasting stage, you’re essentially braising the meat in bbq sauce. Let 2 hour be a guide, but you should cook until the rack feels pliable.
