Sauté chicken to color the exterior then set aside.
Sauté onion in the chicken fat then set aside as well.
Add in potato and carrots to sauté lightly and soak up all the chicken fat.
Add in water and curry mix, simmer until potatoes and carrots are almost cooked.
Add in chicken and simmer until cooked.
To serve, layer rice and sautéd onion then pour over hot curry.
