Ingredients

—Butter (optional)
—Napa cabbage
—Carrots
—Shiitake mushroom
—Enoki mushroom
Broth
250gsake
450gwater + refill
100gmirin
25gsugar
120gsoy
—Kombu

Directions

01

Prepare the broth and simmer for 1-2 hours to incorporate kombu. Add water as liquid evaporates and re-season to taste.

Cook vegetables in the broth.

(Optional) Melt butter and cook the beef medium rare then set aside. If lazy, go ahead and treat hot broth like shabu shabu.

Use the hot broth as a dipping sauce.

Notes

I’m using komatsuna instead of napa cabbage, but any vegetable can work.
