—Seaweed powder or furikake (optional)

200gmiso
85gsugar
100gsake (before reduce)
20gmirin
20gvinegar
—kombu

Directions

Make the marinade. Cook out the sake and kombu before adding the rest of the ingredients.

Marinate the black cod for 1-2 days.

Take the marinated cod out and pat dry. Reserve some marinade and make a sauce in case you want stronger seasoning.

Roast the cod 400ºF 10-15min depending on the thickness. I like to broil at highest heat on the last 1-2min to give it some char.

Break up the cod and get rid of any bones.

Notes

I like to eat this dish with sushi rice. The vinegar rice is a nice contrast with the sweet and fatty marinated black cod. Simple delicious dinner within 15min if you have the rice ready.
