Make the marinade. Cook out the sake and kombu before adding the rest of the ingredients.
Marinate the black cod for 1-2 days.
Take the marinated cod out and pat dry. Reserve some marinade and make a sauce in case you want stronger seasoning.
Roast the cod 400ºF 10-15min depending on the thickness. I like to broil at highest heat on the last 1-2min to give it some char.
Break up the cod and get rid of any bones.
