Directions

Wash ikura in 2% salted water then marinate in mild zuke for at least 20min. You can clean the day before and marinate before cooking the rice.

Make tamago.

Cook rice in a donobe. 1:1 washed rice to water. Steam 17 min covered medium low heat, then turn off heat and steam another 30 min.

Assemble.
