Ingredients

1onion
1bulb garlic
β€”Water
β€”Shaoxing wine
β€”Soy sauce
β€”Soy paste
β€”Rock sugar
β€”Sichuan pepper

Directions

Sear the oxtail then set aside.

Sweat out onions, carrots, garlic.

Add the seared oxtail back in, then shaoxing wine and cook out the alcohol.

Once cooked out, add in water, soy sauce, soy paste, rock sugar, and sichuan pepper. Cover and braise for 4-6 hours. (The braise will likely disintegrate the carrots and onion. I like to set aside some onion and carrots from step 2, sear them separately to eat with the final dish.)

Cook the hand cut noodles in boiling water.

(Optional) Sear onions and carrots in a separate pot. You can also just use the carrots/onion in the braising liquid.

Add in shredded oxtail and braising liquid into the separate pot. Place in cooked hand cut noodles and cook it all to coat the noodle with the sauce. Your sauce will also become more sticky due to starches from the noodle (just like pasta).

Notes

Simple meal. When you think about it even though this is a Chinese dish, the cooking is actually quite Western.
