Sear beef until golden brown then set aside.
Sauté garlic, ginger, onion, green onion, and star anise.
Add in sugar, soy sauce, spicy bean sauce, and beef from step 1.
Add in water and simmer for 1-2hr.
Skim any unwanted surface residue.
Cook noodle and bok choy separately then add beef broth and condiments.
