Simmer whole chicken in water for 12hr or overnight. Discard the chicken once broth is ready. Alternatively use store bought chicken broth.
Fry shallot or onion in a separate pan until golden brown.
Add in broth seasoning except the starch (thicken at the end).



Dredge oysters in potato starch and rest for 15min.
Poach oysters in simmering water for 1 min and transfers to ice water.




Mix potato starch and water. Slowly add into the broth and whisk until broth becomes sticky.
Finish with cilantro, black vinegar, and white pepper to taste.
