Infuse oil with shrimp shells by frying 10-15min then remove shells.
Roast shrimp heads in the oven at 400ΒΊF for 8min.
Add in shrimp to sautΓ©. Cook them halfway then set aside.
Fry beaten eggs until dry.
Add in rice and stir fry until desired dryness.
Scoop out shrimp head into the rice.
Stir fry white parts of green onion and shrimp.
Turn off heat, season with white pepper and green onion.
