Turkey Rice 火雞肉飯

—Turkey (leftover)
6shallot5
—White pepper
—Rice
Sauce
—Turkey/duck fat
—Turkey stock
—Soy sauce
—1-2 bulbs garlic
—Kombu

Directions

Hand pull turkey meat into small slices. Divide them into white meat, dark meat, and skin.

Caramelize shallots in oil.

Make the sauce, transfer turkey fat and some stock from turkey soup into a pot. Reduce the broth by about 1/3. Add in the rest of the ingredients and simmer for an hour until desired intensity.

Assemble everything and spoon sauce over the rice.

Notes

This is our favorite meal from thanks giving. Using the turkey leftovers and creating something magical. Our family loves this over the actual turkey meal.
