Braised Pork Feet 滷豬腳

Ingredients

Scale recipe
—Pork feet
—Shallots
—Garlic
—Shaoxing wine
—Water
—Soy sauce
—Soy paste
—Rock sugar
—Star anise
—Salt

Directions

Wash the pork feet well. I like to poach them in simmering water for a couple minutes to draw out blood. Use a torch to help you clean out hair if needed.

Caramelize shallots.

Add in everything except water, cook out alcohol.

Add in water, then cover and braise for 2-3hr+ (depending on how soft you like your pork feet).

Notes

Similar to how I cook braised pork rice 滷肉飯, but more soy sauce and less soy paste. Pork feet has natural gelatin to thicken the sauce. Some people like it QQ bouncy, some people like it soft. I can go either way on the pork feet texture to be honest. On most days I’d go for bouncy, but sometimes I’m in the mood for softness. TIP: The time it takes to prep/cook dishes like these seem long and impractical. I like to cook them the night before. Here I’d braise the pork feet for 1.5-2hour, then let the residual heat carry through. Next day, heat up and eat.
