Soy Chicken 醬油雞

Ingredients

Scale recipe
—Brown chicken
16g(1/2 bulb) garlic
19g(1/2 bulb) black garlic
28g(2) green onion
8g(2) ginger
1cinnamon1/2
3star anise
2clove2 clove
100grice wine
400gsoy sauce
1200gwater
40grock sugar

Directions

Make the cooking liquid by combining everything except chicken, simmer for 1 hour.

Color the chicken by pouring the soy liquid over chicken, roughly 8min, until skin tightens.

Cook the chicken like boiled chicken. Poach 5min in simmering water, turn off heat and poach an additional 30-40min. Turn the chicken over at the 20min mark so the coloring/marination is even.

Rest, carve, and serve.

Notes

The braising liquid is designed to not be too salty, you can pour some over the meat as you chow this down.
