Make the cooking liquid by combining everything except chicken, simmer for 1 hour.
Color the chicken by pouring the soy liquid over chicken, roughly 8min, until skin tightens.
Cook the chicken like boiled chicken. Poach 5min in simmering water, turn off heat and poach an additional 30-40min. Turn the chicken over at the 20min mark so the coloring/marination is even.
Rest, carve, and serve.
