Sauce

20goyster sauce

Directions

Sear the beef (rare to medium rare) then set aside.

Sear onions and any other vegetables.

Add beef back and sauce, sauté everything together.

Notes

This dish typical uses something like flank or skirt. Hanger steak works particularly well for this dish in my opinion. Texturally bouncy, not too lean, got just the right kind of bite. You don’t need baking soda here.
