Scallion Prawn Fried Rice 蔥蝦炒飯

食材

调整用量
—Tiger prawns or any shrimp
—Green onion (lots)
—Eggs
—White pepper
—Canola/peanut oil
—Overnight rice
—Note: skip salt for postpartum meal.

01

Infuse oil with shrimp shells by frying 10-15min then remove shells.

Roast shrimp heads in the oven at 400ºF for 8min.

Add in shrimp to sauté. Cook them halfway then set aside.

Fry beaten eggs until dry.

Add in rice and stir fry until desired dryness.

Scoop out shrimp head into the rice.

Stir fry white parts of green onion and shrimp.

08

Turn off heat, season with white pepper and green onion.
