—Lamb shank
—Ginger
—Garlic (1 bulb or more)
—Cilantro (optional)
—Soy sauce (not too much)
—Soy paste (not too much)
—Shaoxing wine
—Water
—Rock sugar
—Sichuan pepper

步骤

Sear and brown the lamb shank.

Add in and sauté garlic and ginger.

Add in the rest of the ingredients except cilantro into the pot, heat until simmer.

Braise 4-6 hours in simmering water or 275ºF in a dutch oven until tender and falls off the bone.
