1tspsichuan pepper
1.5tspblack pepper

1.5tspcayenne pepper
2tspfive spice
50gbrown sugar
50ggarlic
100gsoy sauce
100gbeer/milk/water
3gsalt
60gcorn starch

步骤

Marinate the chicken overnight.

Cover the chicken in sweet potato starch, rest in the fridge for 1hr.

03

Fry the chicken at 325°F until the crust is golden then rest on a rack.

04

Fry the chicken a second time at 375°F.

05

Finish with Japanese seven spice and sansho pepper.

American, Korean, and Japanese all got their own versions. Taiwanese is by far my favorite. My version is very intensely flavored. Kapow in yo mouth!
